Tasty Instant Pot Lemon Pepper Chicken and Rice

Instant Pot Lemon Pepper Chicken and Rice is a simple and delicious recipe for chicken dinner.

This creamy long grain, wild rice dish is filled with tender chicken breast morsels.

To prepare this Instant Pot Chicken and Rice, I started by cutting some boneless, skinless chicken breasts into strips.

So I set my Instant Pot to Saute Less for 5 minutes.

I added some butter to the pan and then I added the chicken breast slices.

I left the chicken breast slices for cooking, stirring occasionally.

When the instant pot went out, the chicken breast slices still had pink.

I added some water, condensed chicken broth and lemon juice to the pot.

Then I added some long grain wild rice.

I poured some condensed cream of chicken soup and lemon pepper dressing over the rice.

Then I placed the lid on the instant cooker, rotated the steam release handle to the holding position and set the instant cooker on the pressure cooker for 8 minutes.

When the instant pot has finished cooking, I let it cook for 3 minutes.

Then I turned the steam release handle to the vent position to end with a quick release.

I removed the lid from the Instant Pot and mixed everything together.

So I added some butter to the pan and stirred well again.

I left the chicken and rice for a few minutes before serving.

ingredients

  • 1.5 pounds of boneless, skinless chicken breast
  • 2 cups of water
  • 10.5 oz. Condensed chicken broth
  • 1/3 cup lemon juice
  • 2 cups of long grain and wild rice mixture
  • 10.5 ounces condensed cream of chicken soup
  • 2 tablespoons of lemon dressing
  • 1/4 cup of butter

Instructions

  1. Cut the chicken breasts into strips.
  2. Set Instant Pot on Saute Less for 5 minutes and add a little butter or margarine to the pan.
  3. Add the strips of chicken breast to the pan and cook them, stirring occasionally.
  4. When the Instant Pot goes off, the chicken will still be slightly pink.
  5. Add the water, chicken broth and lemon juice to the pot.
  6. Add the rice to the pan. Do not mix.
  7. Add the cream of chicken soup and lemon dressing. Do not mix.
  8. Place the lid on the instant pan, turn the steam release handle to the sealing position and set the instant pan to the pressure cooker for 8 minutes.
  9. After cooking the instant pan, let it release for 3 minutes.
  10. Turn the steam release handle to the vent position and finish with a quick release.
  11. Remove the lid from the instant jar and mix well.
  12. Add the butter to the pan and mix well again.
  13. Let the chicken and rice rest for a few minutes before serving.
